PIZZA DOUGH RECIPE (8-9 large pizzas)

1kg of 00 flour, 2 tsp dry yeast, 2 cups warm water (500ml), pinch sugar, 1 heaped tablespoon salt, 60ml olive oil.

mix water, sugar and yeast and let froth for a few minutes. Mix with flour, salt and olive oil. 

Mix together, knead and roll into a ball, place in a large bowl covered with plastic or damp tea towel. Let rise for 2 hours.

Roll dough out again into long tube, cut into 8-9 equal portions, knead each one into a ball, place on a tray dusted with flower (spaced apart as they will double in size) and cover with a damp tea towel. 

In 1-2 hours they will be ready to roll into pizza's
